Ham & Cheese Cupcakes

Looking to liven up lunchtime?  These savory cupcakes are easy and oh so cute.  They're delicious warm from the oven but also make a great lunchbox treat.  Great party food too, add them to your next buffet.



1 package (10 oz.) frozen chopped broccoli, thawed and drained
8 ounces sliced deli ham, chopped
1-1/2 cups shredded cheddar cheese
¼ cup FRENCH'S® Classic Yellow® Mustard
¼ cup mayonnaise
2 packages Pillsbury Grand’s Buttermilk Biscuits

Preheat oven to 375°F.  Coat 16 muffin cups with nonstick cooking spray.

In a large bowl, combine green broccoli, ham, cheese, Mustard and mayonnaise.

Separate biscuits and flatten each to about 4-inch diameter.  Line each muffin cup with a biscuit.  Evenly divided broccoli mixture among muffin cups.

Bake 20 minutes or until puffed and golden.  If desired sprinkle with additional cheese and bake 5 minutes or until golden brown.

Cool 5 minutes before removing.
