Black Bean Burgers with Spicy Yogurt Topping

These burgers are so hearty and delicious you won’t even miss the meat!

Prep Time:  10 minutes
Cook Time: 15 minutes
Makes 6 servings

2 cans (14.5 oz. each) black beans, rinsed and drained
1 egg
1/2 cup nonfat Greek yogurt, divided
1/4 cup Emeril’s Original Panko Bread Crumbs
4 green onions, chopped and divided
1 small red pepper, chopped and divided
2 tablespoons plus 2 teaspoons Emeril’s Bam! Burger Seasoning, divided
2 tablespoons mayonnaise
1 tablespoon vegetable oil
6 deli flats, sandwich thins or flatbread
Sliced avocado, lettuce and tomato

Mash black beans with fork or pastry blender.  Stir in egg, ¼ cup yogurt, Bread Crumbs, half of green onions and half of red pepper,  and 2 tablespoons Burger Seasoning.  Shape into 6 patties. 

Combine mayonnaise with remaining yogurt, green onions, red pepper and Burger Seasoning.

Heat oil in large nonstick skillet over medium heat and cook burgers 15 minutes, turning once.  Serve burgers on deli flats and top with avocado, lettuce, tomato and yogurt mixture.
