Gluten Free Pizza


A gluten free pizza crust that's sturdy enough to pick up.

Prep Time: 10 minutes
Cook time: 30 minutes
Makes 6 servings

2 cups Cream of Rice® Hot Cereal, uncooked
4 Tbsp. grated Parmesan cheese, divided
1 tsp. salt
2 large eggs
¾ cup water
¾ cup pasta sauce
2 cups shredded mozzarella cheese

Preheat oven to 400°F.  Lightly grease pizza stone, pan or baking sheet.

Combine Cream of Rice, 3 tablespoons Parmesan cheese and salt.  Stir in eggs and water until blended.  Let rest 10 minutes.

Press Cream of Rice mixture into a 13 to 14-inch circle, making the edges slightly thicker (dough will be crumbly).

Bake 25 minutes or until golden and crisp.

Spread sauce evenly over crust then top with mozzarella and remaining tablespoon Parmesan cheese.  Bake 8 minutes or until cheese is melted.
